Menu Plan Monday

It's Monday again and we have a busier week ahead of us than we usually do so I've tried to plan simple meals for us. Here's our menu...

Monday
Leftover pasta from my parents, salad, french bread

Tuesday
Cheeseburger soup, biscuits, fruit

Wednesday
Leftovers or sandwiches

Thursday
Frozen pizza, carrots and dip

Friday
We'll be at a party for dinner!

Saturday
Lunch - Jeremy will have leftovers or sandwich while Clara and I are at a baby shower for my cousin
Dinner - Oven-baked Chuck Stew, biscuits

Sunday
Lunch - Pancakes, juice
Dinner - Tuna casserole, cooked carrots

Here is the recipe for the Cheeseburger Soup. It's from my cousin's mother-in-law and it's really yummy!

Cheeseburger Soup
½ lb. ground beef
¾ C. chopped onion
¾ C. shredded carrots
¾ C. diced celery
1 t. dried basil
1 t. dried parsley
4 T. butter, divided
3 C. chicken broth
4 C. diced, peeled potatoes
¼ C. flour
2 C. shredded cheddar cheese
1 ½ C. milk
¾ t. salt
½ t. pepper
¼ C. sour cream

Brown beef, drain and set aside. In same pan, sauté vegetables with basil and parsley in 1 T. butter until tender. Add broth, potatoes and beef. Bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet melt remaining butter. Add flour, cook and stir 3-5 minutes or until bubbly. Add to soup and bring to boil. Cook and stir about two minutes. Reduce heat to low, add cheese, milk, salt and pepper. Cook until cheese is melted. Remove from heat and add sour cream. Serves 8.
